The Saveurs Musicales
Les Saveurs Musicales is a project developed in 2014 and 2015, aimed to introduce students and future chefs to music, more specifically to baroque music.
The Grand Théâtre de Provence and Café Zimmermann have accompanied students from the Bonnevine hotel and catering school of Marseille in a culinary challenge interrelating music and cuisine: turn a musical programme into flavours by creating consistency between the two universes.
Many activities have been organised:
- A tour of the Grand Théâtre de Provence and a meeting with Céline Frisch in October 2014
- A debate during Café Zimmermann’s rehearsal in December 2014 at the Grand Théâtre de Provence
- 3 workshops at the Bonnevine high school, two classroom-based and one kitchen-based
- An end-of-project evening with the introduction of culinary creations associated to the musical programme performed by Café Zimmermann
To see this project through, Etienne Mangot, soloist (cello and viola de gamba) and teacher at the Nice conservatoire, was the intermediary between those two universes. Thanks to a significant effort of mediation among the students, he gave them the right listening skills; the Café Zimmermann’s musicians also accompanied this learning project and this creation through the rendition of works from the programme during a final concert. A close collaboration with the teaching team of the hotel and catering high school, especially with the cooking and service teachers, was essential to conduct and supervise such a project. Otherwise, we have had the honour of Michelin-starred chef Jean Marc Banzo’s presence and involvement, as the sponsor of the Musical Flavours.
This project collaborates with the Grand Théâtre de Provence, the ASSAMI association, and the Bonneveine hotel and catering high school of Marseille.
